Spanish pies or empanadas

Regardless of how the pies are filled, they always taste great. They are also suitable for every occasion. Because they can be served as a starter, side dish or as a small snack in between.

The preparation forms allow great variety. Because the empanadas can be filled with a wide variety of ingredients and fried in the oven or in hot fat. 

The secret lies in the mass:  you can use a finely rolled empanada dough or a puff pastry. According to taste and the time available for preparation. The filling can also be easily adapted to your own taste.

Many recipes are not suitable for vegans. For example, the dough is usually coated with egg yolk to guaranteenice color and taste. But there are also many options for vegans to prepare delicious Spanish pies.

Today we have two suggestions for you that you can easily cook. They taste great!

Recipe 1: vegan pies with vegetables

Vegan pies with vegetables 
Prepare your own vegan pies, it’s easy! Plus, you can customize them to suit your preferences and tastes.

Ingredients for the dough:

  • 1 cup of wheat flour
  • 1/3 cup of lukewarm water
  • 3 tablespoons of olive oil
  • 1 teaspoon of baking powder
  • Soy milk to brush on
  • salt

Ingredients for the filling:

  • 1/2 cup peas
  • 1 small onion
  • 1/2 red pepper
  • 1 small zucchini
  • 1 clove of garlic
  • some celery
  • 1 teaspoon of baking powder
  • salt
  • pepper

Preparation of the empanadas

  • First, cook the peas.
  • In the meantime, mix all the ingredients for the dough together well and then cover it. Put the dough in the refrigerator for half an hour.
  • Then wash and chop the vegetables. Add a generous splash of oil and season the vegetables with salt and pepper.
  • Then you can fry the vegetables, including the peas, in a pan until they are done and there is no more liquid.
  • Then take the batter out of the refrigerator and divide it into 8 servings. Knead each portion and use a rolling pin to form a fine, round disc.
  • Then put the vegetable filling on the disc and then fold the dough disc in the middle. Seal the “crescent” well with a fork so that it does not open during baking or deep-frying.
  • Then you brush the dough with soy milk.
  • Repeat this procedure until all of the pies are prepared, then place them on a baking sheet lined with parchment paper.
  • Then you just have to bake the pies in the preheated oven at 200ºC for about 20 minutes until  golden brown.
  • You can already enjoy these delicious empanadas. You can serve them cold or warm.

Recipe 2: vegan empanadas with spinach

Vegan pies with spinach 
Be particularly careful when filling the empanadas and do not overdo it with the filling so that they do not open during baking or deep-frying.

Ingredients for the dough:

  • 2 cups of wheat flour
  • 1/2 teaspoon of salt
  • 1 teaspoon of sugar
  • 1/2 cup vegetable margarine
  • 1 tablespoon apple cider vinegar
  • 1/3 cup cold water

Ingredients for the filling:

  • 1 sachet of frozen spinach
  • 1/2 onion
  • 1 large clove of garlic
  • 2 tablespoons of olive oil
  • salt

Preparation of the dough:

  • First sift the flour and then add salt and sugar.
  • Then mix the remaining ingredients with the flour:  Add the soft margarine (room temperature) and form a smooth dough. 
  • Gradually add the vinegar and water and knead everything well until a homogeneous mass is formed.
  • Cover the dough and put it in the refrigerator for an hour. 

Preparation of the filling:

  • In the meantime, peel the onion and the clove of garlic and cut both finely.
  • Then fry in a pan with a little olive oil until golden brown.
  • Then add the already defrosted spinach to the pan. Don’t forget to remove the water well first.
  • Then stir everything well and cover the pan. Let the filling simmer for 5 to 7 minutes, then remove it from the stove.

Completion of the empanadas:

  • Then you take the dough out of the refrigerator and divide it into individual portions to form small pies.
  • Use a rolling pin and form fine round slices out of the dough, which you then fill with a tablespoon of filling.
  • Then fold the dough slices in the middle and close them tightly with a fork. 
  • Then place the Spanish pies on a baking sheet with parchment paper and bake them in the preheated oven at 200ºC for 20 minutes.
  • Then you can enjoy these delicious Spanish delicacies with spinach!

Both recipes will taste great for everyone, regardless of whether the guests are vegan or not.
