Basic recipe for banana bread

The basic recipe gives you plenty of room for your own interpretations. You can exchange, omit or replace different building blocks with alternatives. In the following we suggest a few of the many possible variants. But first the basic recipe:

  • 3 eggs
  • 6 bananas
  • 80g ground nuts
  • 160g dried fruit
  • 100ml oil
  • 100ml liquid
  • 90g sugar or 3 tablespoons honey or alternatives
  • 1 pack of vanilla sugar

Preheat the oven to 180 ° C. Then puree the bananas and set aside. In a bowl, beat the eggs until frothy and stir in the liquid and oil. Then add the sweetener of your choice.

Then add the mashed bananas and the dried fruit cut into small cubes and gradually work everything into a dough with the grated nuts. Bake in a loaf pan for about 40 minutes.

The banana bread will be even more juicy if you soak the dried fruit in the liquid of your choice at least overnight beforehand.

Recipe variant without sugar

For a banana bread completely without additional sugar, you really need fully or overripe bananas. If you don’t have enough of them, you can collect them over a longer period of time by freezing your individual overripe bananas, cut into slices.

When you’ve had enough, you’re good to go.

Alternatively, you can ask the store whether there are overripe bananas that may not be on display. Sometimes these are hidden from the customer’s eyes or are offered at a discounted price.

If you use these overripe bananas, you can leave out sugar, honey or other sweeteners and the banana bread is still sweet enough.

Coconut oil for banana bread

Tropical recipe variant

To bring a tropical flavor to your banana bread, you only need to swap out a few ingredients. As a liquid, choose a delicious fruit juice, for example orange or pineapple juice.

In this case, the dried fruit can consist of rum raisins, which you can easily make yourself by soaking 160g raisins in a jam jar with rum. The longer you soak the raisins, the juicier they will be.

To perfect the tropical taste, choose desiccated coconut as a nut ingredient. Instead of vanilla sugar, choose a tropical ingredient from your supplies: coconut syrup, coconut liqueur, … you’ll find something! If necessary, add another shot of rum. Instead of the salad oil, choose coconut oil, if you have any.

Winter recipe variant

Bananas are a typical fruit that one likes to eat in winter. Accordingly, winter spices also go well with it. Choose hazelnuts, replace the oil with butter and season your winter banana bread with gingerbread spices or just a little cinnamon.

Milk is recommended as a liquid. You can use finely diced dates or figs as dried fruit.

Almonds go wonderfully with bananas, which is why you can add almond flavors to your banana bread. First choose ground almonds and use a few drops of bitter almond flavor instead of vanilla sugar.

If you have, use almond milk as the liquid, but any other milk will work too.

If you soak the dried fruits, raisins go well here, in amaretto a few days beforehand, the banana bread gets even more of an almond flavor.

Alternatively, you can replace some of the liquid with amaretto. In that case, however, do without the bitter almond aroma.

Overripe bananas are also available in summer. If you don’t use this as a base for a delicious ice cream or sorbet, you can of course also use it in summer for a delicious banana bread.

Instead of dried fruit, small berries such as currants or blueberries are particularly suitable, which you first dust with flour and then fold into the dough at the very end.
