As already mentioned, the basic recipe for flan consists of only two main ingredients: eggs and liquid. The liquid can be milk, but cream, juice or mixtures thereof are also possible.

This is the basic recipe you can use to make your own creations:

  • 3 eggs
  • 250ml milk
  • 8 tbsp sugar

Let half of the sugar caramelize in a saucepan. As soon as the sugar is liquid and brownish, carefully pour it into the prepared flan molds and let it set again.

Beat the eggs with the second half of the sugar until creamy. The color of the custard will turn whitish. Then stir in the milk and keep stirring in until the liquid stays creamy.

Then pour the egg mixture into the molds and cover each one individually with aluminum foil (or a fire-proof lid).

Fill a baking dish or deep baking sheet with water and place the filled molds in it. Cook the flan in boiling water for an hour. Either at around 200 ° C in the oven or simply on the stove.

  • 1 organic orange

If you replace half of the sugar with orange jam, the taste will be even more intense. If you use cream instead of milk, the flan will have a slightly fuller taste.

Wash the orange well,  rub the orange peel with a zest and immediately mix the peel with the custard to prevent the essential oil from evaporating.

Cook the flan in a double boiler as you normally would while cutting the flesh of the orange into small pieces. Serve the cooled flan with the orange pieces.
