Vegan cheese: ingredients

  • 3 medium-sized avocados
  • 4 tablespoons coconut oil (liquid) (60 ml)
  • 2 tablespoons lemon juice (30 ml)
  • 1 teaspoon sea salt or Himalayan salt (5 g)
  • 6 tablespoons nutritional yeast (90 g)
  • ¼ cup Rejuvelac (fermented drink, see the recipe below) (62.5 ml)
  • 2 tablespoons of psyllium powder (30 g)
  • 2 tablespoons of dried oregano (20 g)

Vegan cheese: preparation

  • Halve the avocados and remove the stone.
  • Then put the pulp in the blender along with the coconut oil and lemon juice.
  • Then add salt, nutritional yeast and Rejuvelac.
  • Process everything well and then add the psyllium powder.
  • A homogeneous, viscous mass is created.
  • As soon as you get the desired consistency, fill the ring shapes on a plate with baking paper with this mixture.
  • Then place the molds in the refrigerator for at least 8 hours.
  • After that, the vegan cheese should be firm.
  • All you have to do now is take it out of the mold and roll it in oregano.

How is Rejuvelac made?

Ingredients (for 3 liters)

  • 1 cup buckwheat, quinoa or barely (200 g)
  • 12 cups of water (3 liters)

Utils

  • Large glass vessel
  • Rubber ring or thread
  • Mesh or fabric

Manufacturing

  1. First you let the selected grain germinate until the sprouts can be seen. To do this, you simply have to soak the grain in water for 8 hours.
  2. Cover the glass vessel with a net or a piece of fabric and secure it with the rubber ring or thread.
  3. After soaking, remove the water.
  4. Now place the glass vessel with the opening closed by the fabric tilted downwards (at an angle) so that the remaining water can drip off.
  5. Let the grain ferment for another 2 days and moisten it with water several times.
  6. Then rinse the grains and fill the glass jar with twice as much water.
  7. Wait another 24 hours and your fermented drink will be ready.
  8. Pour everything through a sieve and you’re ready to use the drink.
  9. You can use the sieved grains twice to make even more. In this case, start over at point 6. However, only let the grain ferment for 12 hours.

Note:  You can also use lentils, spelled, or other grains for this fermented drink. Note that the drink will ferment faster in warm temperatures, while it will take longer when it is cold.
